Old Stargazer is a bourbon barrel aged hot sauce, aged for one full year in used bourbon barrels from Chuckanut Bay Distillery here in Bellingham, WA.  We started making this sauce in the fall of 2024 after chatting with the folks at the distillery about the idea.  Every autumn after harvest, we de-stem and chop 3 types of red chilies (cayenne, Fresno and red Trinidad scorpion) - all of which are locally grown, and we add them to the barrels with a sea salt brine and then we tuck them into our fermentation room for one year.  Once completed, we blend these ingredients with some garlic, onion, carrots and apple cider vinegar and we cook and bottle it.  The layers of flavor brought about from the oak fermentation, along with the other ingredients creates a deeply complex & versatile sauce which tastes great on just about anything!
